Slow cooked quality
Faced with a request for something different on the menu, I decided to go with a standard. Ribs. No matter that it takes a whole afternoon to do the job properly; that’s what I had available on the timeline. I decided to go outside my comfort zone and purchase the meat from a local butcher shop. Bit more expensive, balanced by much better quality. Home to heat the oven and then let the combination of low heat and slow time work the magic. It did.
