VPN, type 2

posted in food, travel |

In IT, we live with acronyms. No need to amaze you with a virtual bowl of alphabet soup. However, this evening I had crossover communication during supper.

Start with VPN. In my office, that the only way to “work” through a robust firewall. Not always easy to configure. Tends to leave my clients on the back edge of satisfied. When we happened across a new restaurant, downtown, their pride in the designation (by acronym) of VPN left me curious.

Turns out, the eatery is in the pizza trade, but not the usual pie flogged from delivery cars. This place has a reputation to uphold, involving centuries old recipes and techniques from Napoli.

My tastes, when it comes to pizza, are not difficult. Some geese, lots of meat, a crust that doesn’t remind me of the packaging. This place delivers, and the freezer to oven aspect is not part of the recipe.

Particular tomatoes, particular cheeses and meats, particular oils (eevo) and an oven that burbs “hot and fast”: 900F for 90 seconds. And it works.

My 11 inches of pie came “hot and fast”. Delicious, too. I can recommend the place based on culinary quality. However, be prepared to wait. The “greeter” needed a name and cell number, to text us when it was time to leave to (uncomfortable) stools in the front area and move us along to (comfortable) chairs at a smallish table. Too much personal info for something that is usually anonymous.

I had read about the restaurant, in the newspaper. Now I’ve been there. Had the pie and pricy imported soda pop. Still need the Tee.
